Piatto tipico della tradizione Parmigiana, la ricetta dei tortelli d'erbetta vede la luce nelle cucine casalinghe dei contadini della bassa parmense, che di ritorno dalla mietitura del grano del mese di giugno, mangiavano i tortelli preparati dalle amabili mani delle massaie.
Fu così che quell’occasione creò una tradizione che si è tramandata sino ai nostri giorni. I tortelli d’erbette si mangiano tutto l’anno, ma, per tradizione, aprono ufficialmente la stagione estiva con la classica tortellata nella notte del 24 giugno quando in tutta Parma e provincia, all’aperto, al canto dei grilli e cicale, gustando i tortelli d'erbetta, si prende la cosiddetta rugiada di San Giovanni.
